chipsi mayai




Last week I tried this 'Tanzanian' specialty for the first time.
Basically, it's a french fry omelette. 
So oily. So bad for you. But so tasty. 


Speaking of food. 
Today is Eid, which marks the end of Ramadan, and the end of fasting from sunrise to sundown for the many Muslims in our community (including our guards and Duncan's teammate, Ayesha).

Tomorrow is a national holiday--no official work for Duncan at the hospital. We've joked that Tanzania probably has more national holidays than most countries since it celebrates both the Islamic and Christian holidays and a bunch of other holidays in between. 

A good reminder that despite Tanzania's many troubles, Christians and Muslims and people of varied faiths and tribes live relatively peacefully side by side.
